Historically, most Hunter Semillon was bottle aged before release. A contemporary approach to winemaking has resulted in some interesting ‘textural’ complexities in these wines, making them more attractive and approachable in their youth.
An unwooded style, young Hunter Semillon displays fresh, vibrant lemon/lime characters with amazing purity and length. Think summer, sunshine, freshly shucked oysters/bucket of prawns, sashimi... Yes, you get the picture.

An "off dry" style of Hunter Valley Semillon where the fermentation is stopped prior to completion. The touch of sweetness is perfectly balanced by an elevated limey acidity, finishing crisp, clean and fresh.
